I love a quick and easy breakfast! These are packed with goodness and taste sooo good! I like to use the protein powder instead of flour to add a little extra protein to my morning! These are delicious and a great grab and go breakfast or snack! Enjoy 🙂


Breakfast Energy Bars

2 cups quick cooking rolled oats

1 cup flour (for protein bars substitute 1 cup protein powder)

1 cup grated organic carrots

½ cup diced apple (skin on)

1/3 cup each roasted unsalted sunflower seeds and chopped walnuts (or any chopped nuts or seeds of choice)

2 tsp ground cinnamon

¼ tsp salt

1 egg

½ cup coconut oil

1/3 cup honey or maple syrup

1/4 cup coconut sugar

1 tsp vanilla


Line a 13 x 9 inch pan with parchment paper, leaving 2 inches on each end, grease parchment paper with coconut oil or butter.

In large bowl, combine oats, flour(or protein powder), carrots, apple, sunflower seeds, walnuts, cinnamon, and salt. In medium  bowl, whisk egg, oil, maple syrup, sugar, and vanilla until blended. Pour over dry ingredients and mix until thoroughly combined.

Spoon mixture into prepared pan, press firmly into an even layer with a spatula. Bake at 375 degree in oven for about 25-30 minutes until lightly browned around the edges and firm to the touch. Let cool completely in pan on rack. Using foil overhang as handles, remove from pan and transfer to cutting board. Cut into bars. Store covered in the refrigerator.

Tip: Freeze individually wrapped bars in an air tight container, thaw for 15 minutes and enjoy anytime!
